Gnocchi Bake
INGREDIENTS
- 2 teaspoons olive oil
- 2 spring onions
- 500g beef mince
- 1 cup button mushrooms
- 2 zucchinis
- 400g tinned diced tomatoes
- 2 tablespoons tomato paste
- 500g potato gnocchi*
- ½ cup fresh basil
- ½ cup grated cheese*
METHOD
- Preheat the oven to 180 degrees celsius.
- Heat the oil in a fry pan over medium heat.
- Slice the spring onions, add to the pan and sauté for 2 minutes.
- Add the mince, break it apart and sauté for 2 minutes.
- Slice the mushrooms and zucchinis and add to the pan.
- Add the diced tomatoes and tomato paste, stir to combine and simmer on high heat for 5 minutes.
- Cook gnocchi as per packet instructions, drain and add to the pan.
- Add the basil, stir to combine and pour into a large baking dish.
- Sprinkle over the cheese and bake for 10 minutes or until golden.
