Gnocchi Bake

INGREDIENTS

  • 2 teaspoons olive oil
  • 2 spring onions
  • 500g beef mince
  • 1 cup button mushrooms
  • 2 zucchinis
  • 400g tinned diced tomatoes
  • 2 tablespoons tomato paste
  • 500g potato gnocchi*
  • ½ cup fresh basil
  • ½ cup grated cheese*

METHOD

  1. Preheat the oven to 180 degrees celsius.
  2. Heat the oil in a fry pan over medium heat.
  3. Slice the spring onions, add to the pan and sauté for 2 minutes.
  4. Add the mince, break it apart and sauté for 2 minutes.
  5. Slice the mushrooms and zucchinis and add to the pan.
  6. Add the diced tomatoes and tomato paste, stir to combine and simmer on high heat for 5 minutes.
  7. Cook gnocchi as per packet instructions, drain and add to the pan.
  8. Add the basil, stir to combine and pour into a large baking dish.
  9. Sprinkle over the cheese and bake for 10 minutes or until golden.
